Frococcia at midnight

Ok, so Dave and I are NUTS. We were just watching a movie and BOOM bread sounds SO good. We had found a 1 day focaccia recipe that rocks. So here we are at 12:40am on Mother's day ‘09 making focaccia bread. The recipe and pics are below.

Start off with:

1 Cup of hot water (110 to 115 degrees)
1 Tbsp yeast
1 tsp sugar

Mix thoroughly and allow to stand for 10 minutes or until top of mix is covered in foam. While waiting mix the following ingredients;

2 3/4 cups of all purpose flour
1 Tbsp Garlic Powder (optional)
1 tsp Salt
Pinch black pepper
1 Tbsp Rosemary (optional)
1 Tbsp Basil (optional)
1 Tbsp Oregano (optional)
When yeast mix is ready add 3 Tbsp oil to flour and seasoning mixture and then add yeast mix. Mix well. Kneed dough until elastic. Coat the inside of a bowl in oil and place dough ball inside. Turn dough ball to coat in oil. Let rise for 20 minutes or until doubled in size.

After dough has risen, roll out on floured surface to approx 1/2 inch. Garnish top with Mozzarella cheese or Parmesan. Some recipes suggest brushing with olive oil. Place in preheated oven at 450 degrees. You can either use a baking sheet or pizza stone. If you use a stone make sure to heat the stone with the oven. Bake for approximately 20 minutes. Cut and enjoy.
